About Estragon Suppenbar

Estragon Suppenbar is a soup counter on the Herderplatz that keeps short hours and does one thing: a rotating handful of soups, several of them vegan, served from eleven until four. It is not a restaurant you sit down in so much as a place you eat at, on one of the town's better squares.

Look for a wholefood shop, not a restaurant front

The thing to know before you go is that the Suppenbar does not have a shopfront of its own. It operates inside the Bio-Laden Rosmarin, the small organic shop at Herderplatz 3, which the co-operative that runs both describes as the little one — good fruit and vegetables rather than a full range. Anyone walking the square looking for a sign saying Estragon will walk past it. Go into the shop and the soup is at the back.

A co-operative, not a restaurant group

It is run by EVG Biofrische, a Weimar co-operative whose watchword for itself is regional, co-operative, near, and which also keeps a larger shop with a full range on the Eduard-Rosenthal-Straße. The soup bar no longer has a web address of its own: the business did not close, it became part of the co-operative.
